Farina Oysters and Rockefeller
Farina's version of Oysters Rockefeller. Oysters Rockefeller was created in 1889 when due to a shortage of escargot, the locally available oysters were substituted. The original sauce recipe is a secret. The chef that created it took the recipe to his grave. Here at Farina we have created a version using sambuca, creamed spinach, crispy prosciutto and hollandaise.
They’re called Rockefeller after John D. Rockefeller because of the dish’s rich taste and Rockefeller’s rich estate.
